Streusel-Topped Blueberry Muffins
What you need:
- 1 3/4 cup flour
- 2 3/4 tsp. baking powder
- 3/4 tsp. salt
- 1/2 cup sugar
- 1 large egg
- 3/4 cup buttermilk
- 1/3 cup canola (or vegetable) oil
- 1 cup fresh or frozen blueberries
- 1 tbsp. flour
- 1 tbsp. sugar
For Streusel Topping:
- 1/4 cup sugar
- 2 1/2 tbsp. flour
- 1/2 tsp. cinnamon
- 1 1/2 tbsp. butter
Directions:
- Combine flour, baking powder, salt, and sugar. Make a well in the center.
- Whisk together egg, buttermilk, and oil.
- Add egg mixture into flour mixture and stir until just combined.
- In a bowl, toss blueberries with flour and sugar.
- Fold into batter. Spoon batter into greased muffin tin or lined muffin tin.
- Mix together 1/4 cup sugar, flour, and cinnamon. Cut butter into until mixture is crumbly.
- Sprinkle over batter and bake for 18 minutes.
- Cool for 5 minutes in pan and then move to a wire rack.
