Cinnamon Sugar Pull-Apart Bread
What you need:
- 2 3/4 cup plus 2 tbsp. all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 tsp. active dry yeast
- 1/2 tsp. salt
- 2 oz. unsalted butter
- 1/3 cup whole milk
- 1/4 cup water
- 2 large eggs, at room temp
- 1 tsp. vanilla extract
- 1 cup granulated sugar
- 2 tsp. cinnamon
- 1/2 tsp. ground nutmeg
- 2 oz. unsalted butter, melted until browned
Directions:
- Whisk together 2 cups flour, sugar, yeast, and salt.
- In a separate bowl, beat eggs.
- In a small saucepan, heat milk and butter, until butter has melted. Remove from heat and add water and vanilla extract.
- Let milk mixture stand for about 2 minutes. Mix into dry ingredients.
- Then add eggs and mix until they are incorporated.
- Add remaining flour (3/4 cup) and mix for another 2 minutes. Dough will be sticky.
- In a greased bowl, let dough rise until doubled, about an hour. Cover the bowl with plastic wrap and a clean dish towel.
- When the dough is almost doubled, mix together the sugar, cinnamon, and nutmeg for filling.
- Melt/brown butter.
- Punch down dough and knead with 2 tbsp. flour. Cover with clean dish towel and let rise for 5 minutes.
- Roll out dough on a lightly floured surface into a 12x20-inch rectangle.
- Brush rectangle with browned butter and sprinkle with cinnamon mixture.
- Slice dough vertically with a pizza cutter into six strips.
- Stack on top of one another and slice into six equal slices.
- Layer the stacks in a greased 9x5x3-inch pan. Cover with a clean dish towel and let rise for 30 to 45 minutes.
- Bake for 30 to 35 minutes in a preheated 350* oven.
- Let rest for 20 to 30 minutes before inverting onto a serving plate. You'll want the caramelized sugar from the bottom to be on top!
