3-Cheese and Bacon Macaroni

What you need:

    • 1/2 lb. elbow macaroni
    • 3 slices bacon, sliced into 1/2-inch pieces
    • 1 large garlic clove, minced
    • 3 large eggs
    • 12 oz. can evaporated milk
    • 1/4 tsp. cayenne pepper
    • 1/8 tsp. ground nutmeg
    • 1 1/2 cups shredded sharp cheddar
    • 1/2 cup shredded Monterey Jack cheese
    • 1/2 cup shredded Parmesan cheese

Directions:

    1. Preheat oven to 475* and cook bacon in a small skillet until crisp. Add garlic and cook for 30 seconds more. Remove to a medium size bowl (without the grease!).
    2. Cook pasta in a bot of salted water for 6 minutes. Drain and add to bacon and garlic. Stir to combine.
    3. In a separate {large} bowl, whisk together eggs and milk. Add 1/2 tsp. salt, cayenne, nutmeg, and cheeses.
    4. Add pasta mixture to cheese mixture and stir.
    5. Transfer to a greased 8-inch square baking dish and bake for 12 minutes. Rest for 10 minutes before serving.
