Garlic-Rubbed Bacon & Tomato Grilled Cheese

What you need:

    • 8 slices bacon, cooked until crispy
    • Shredded Parmigiano-Reggiano cheese
    • Italian bread (I used Italian sourdough)
    • 2 ripe tomatoes, sliced thinly
    • 1 to 2 large garlic cloves, peeled and cut in half

Directions:

    1. Lay down 4 slices of bread and top with some cheese. Then add 2 slices of bacon to each piece of bread and then a few slices of tomato. Top with some more cheese and then second slice of bread.
    2. Butter the outside of both slices of each sandwich.
    3. Brown each side in a skillet over medium heat.
    4. After both sides have browned, remove from skillet and immediately rub each side of all sandwiches with cut side of the garlic cloves.
