Nutella Cupcakes with Nutella Buttercream Frosting
What you need:
Cupcakes:
- 1/2 cup cocoa
- 1 cup hot water
- 1 cup buttermilk
- 2 cups sugar
- 2 eggs
- 1/2 cup vegetable oil
- 1 1/2 tsp. vanilla
- 2 1/2 cups flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup heavy cream
- 1/2 cup Nutella, melted
Frosting:
- 1/2 cup butter, softened (1 stick)
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 packet Dream Whip
- 1/3 cup Nutella
- 3 Tbsp. milk
- 2 to 3 cups powdered sugar
Directions:
- For Cupcakes: Place cocoa in a bowl or stand mixer. Pour hot water over the top and mix.
- Add buttermilk and mix. Then add sugar and mix.
- Mix in eggs, oil, and vanilla.
- In a separate bowl, stir together flour, baking powder, baking soda, and salt.
- Add dry ingredients to wet ingredients and mix.
- Stir in heavy cream and Nutella.
- Divide into lined muffin/cupcake pan.
- Bake at 350* for 18 to 22 minutes. Cool for at least 30 minutes.
- For Frosting: Cream together butter, salt and vanilla until light and fluffy.
- Add Dream Whip on low.
- Then beat in Nutella, powdered sugar, and milk - I used all 3 cups and all 3 Tbsp. Use to your desired consistency!
- Frost cooled cupcakes and refrigerate until time to serve.
