Marinated Pork Chops with Pineapple Salsa
What you need:
- 4 bone-in, center-cut pork chops
Marinade:
- 1/4 tsp. lime zest
- 2 limes, juiced
- 1 tbsp. honey
- 1 small shallot, chopped
- 1 jalapeno, deseeded and chopped
- 1 garlic clove, chopped
- 1/2 cup olive oil
- Salt
Pineapple Salsa:
- 1/2 pineapple, diced and cored, reserve juices
- 1 tomato, diced
- 1/2 red onion, minced
- 1/2 small jalapeno, diced
- 1 tbsp. chopped cilantro
- 1 lime, juiced
- Salt and pepper
Directions:
- Mix all marinade ingredients together and place in a Ziploc bag. Add pork chops and marinade for up to 3 hours in the fridge.
- Mix all salsa ingredients together while you preheat your grill. Taste to make sure your seasonings are right and let rest for 10 minutes.
- Grill pork chops for 5-8 minutes per side on medium and let rest 10 minutes before slicing.
- Serve chops with salsa over top.
