Lemon Chicken

What you need:

    • 1/4 cup extra virgin olive oil
    • 3 tbsp. garlic, minced
    • 1/3 cup chicken broth
    • 1 tbsp. lemon zest
    • 2 tbsp. lemon juice
    • 1 1/2 tsp. oregano
    • 1 tsp. thyme
    • Salt and pepper

Directions:

    1. In a small saucepan, combine oil and garlic. Cook for 1 minute on medium low heat.
    2. Add broth, zest, juice, oregano, thyme, and salt and pepper.
    3. Pour into a 9x13-inch pan. Add the chicken.
    4. Brush the tops of the chicken with olive oil. Salt and pepper them, to taste.
    5. Cut 1 lemon into wedges and add around the chicken.
    6. Bake at 400* for 30 to 40 minutes.
