Red Beans and Rice

Ingredients

1 med. onion

1 small green pepper

1 stalk celery

2 cloves garlic

2 T oil

1 can 15 oz dark red beans

1 1/2 C minute rice

3/4 cup water

1/3 C BBQ sauce

1/8 tsp pepper

Procedure

Cook and stir onion, pepper, celery, and garlic until tender. Stir in beans with liquid and remaining ingredients. Bring to a boil then reduce heat and cover and simmer 5 minutes. Remove from heat and let stand for 5 minutes.
