Prosciutto Wrapped Dates stuffed with Goat Cheese

Makes 24

Ingredients

  • 12 slices of Prosciutto, cut in half the long way
  • 24 large fresh basil leaves
  • 24 whole Medjool Dates, pitted and slit on one side
  • 6 ounces Goat Cheese
  • toothpicks to hold the dates together (not necessary)

Method

Take a date and with a small spoon or knife, scoop enough goat cheese to fill the date through the slit that you cut. You can be generous with the goat cheese when stuffing, but it should just reach the top of the slit. Wrap one basil leaf around the stuffed date, wrap one half of a prosciutto slice around the basil wrapped date and fasten with a toothpick.

Place under the broiler for 3-4 minutes or until they are as crisp as you might like. The stuffed date really does not have to be cooked but the tastes come together much better when you give them a little heat under the broiler. Enjoy!

TIP: You can have the Prosciutto sliced thin or a little thicker, but keep in mind, if thicker, you might not want to use the entire half of the Proscuitto. The prosciutto gives this the salty taste and too much will take away from the sweet and tangy flavors
