Balsamic Onion Marmalade

Ingredients

1 T olive oil

4 C onion peeled and thinly sliced

salt and pepper

1/3 C sugar

2/3 C balsamic vinegar

Procedure

Heat oil in a large skiller over medium heat until it slides easily across the pan. Add onions, salt and pepper, and cook stirring occasionally, until the onions are soft and light brown, about 20 minutes. May need to add a ittle water if they are browning too rapidly

Add the sugar and rduce the heat to medium low. Cook stirring frequently, until the onions appear dry, about 10 minutes. Add the vinegar. Reduce the heat to low and cook, stirring occasionally until the onions are soft and dry, about 1 hour. Serve warm at room temp. Store the marmalade in the refrig for several weeks.

If you use a very sweet onion reduce the sugar.

Serve with crackers and cram cheese with marmalade on top.
