Pumpkin Roll

Ingredients

3/4 C flour

1 tsp baking powder

2 tsp cinnamon

1 tsp pumpkin pie spice

1/2 nutmeg

1/2 tsp salt

3 large eggs

1 C sugar

2/3 C canned pumpkin

1 C walnuts

Filling:

1 C powdered sugar

8 oz softened cream cheese

6 T soft butter

1 tsp vanilla

Procedure

Grease a 15 by 10 jello roll pan. lay down a layer of wax paper then grease and flour the paper.

Mix together first set of ingredients. Cream eggs and sugar then add pumpkin and nuts. Add all together.

Bake 15 minutes at 350 degrees until the center springs back to touch. Loosen around the edges then invert onto a clean damp cloth dusted with powder sugar. Take off the wax paper and roll in cloth. Cool completely. Unroll and fill with filling mix then roll up again and refrigerate. Slice and sprinkle with powder when serving.
