Bananas, ripe 1 ¼ pounds (600g)
Sugar 1 cup (220g)
Coconut milk 1 cup (250 ml)
Vanilla extract ½ teaspoon
Butter, melted 2 Tablespoons (30g)
Pain de Mie 7 – 8 slices
Procedure
Procedure
- Slice the bananas diagonally and sprinkle with half the sugar.
- Cook the remaining sugar in the coconut milk until dissolved, and then add the vanilla.
- Remove the crusts from the bread.
- Soak the bread in the sweetened coconut milk.
- Line a 12-inch (30 cm) round with parchment paper on the bottom.
- Arrange a layer of banana on the bottom of the pan in a uniform pattern.
- Cover with a layer of bread, then another layer of bananas, another bread layer, and then finish with a layer of bananas.
- Do not add the remaining coconut milk.
- Drizzle the melted butter over the top, then cover with foil and bake in a preheated oven at 350ºF (180ºC) for 1 hour.
- Rest for 12 hours before cutting.
Serve with a warm chocolate sauce!!
