Banana Cake

Ingredients

Bananas, ripe 1 ¼ pounds (600g)

Sugar 1 cup (220g)

Coconut milk 1 cup (250 ml)

Vanilla extract ½ teaspoon

Butter, melted 2 Tablespoons (30g)

Pain de Mie 7 – 8 slices

Procedure

  1. Slice the bananas diagonally and sprinkle with half the sugar.
  2. Cook the remaining sugar in the coconut milk until dissolved, and then add the vanilla.
  3. Remove the crusts from the bread.
  4. Soak the bread in the sweetened coconut milk.
  5. Line a 12-inch (30 cm) round with parchment paper on the bottom.
  6. Arrange a layer of banana on the bottom of the pan in a uniform pattern.
  7. Cover with a layer of bread, then another layer of bananas, another bread layer, and then finish with a layer of bananas.
  8. Do not add the remaining coconut milk.
  9. Drizzle the melted butter over the top, then cover with foil and bake in a preheated oven at 350ºF (180ºC) for 1 hour.
  10. Rest for 12 hours before cutting.

Serve with a warm chocolate sauce!!
