Chinese Broccoli Slaw

Ingredients

1 package broccoli slaw

1/2 C toasted almond slices or slivers

1/4 C sunflower seeds

1/4 C pepitas (pumpkin seeds) unsalted raw

1 package ramen noodles smashed up

1 bunch of green onions chopped or chives

chicken - cold and cut up into bite sized pieces (optional)

Dressing:

1/2 C vegetable oil with a little sesame oil added for flavor

1/4 - 1/2 C sugar (less!!)

3 T white vinegar - or rice wine vinegar

1 -2 T Thai sweet and hot chili sauce

salt and pepper

minced ginger to taste

Procedure

Mix all together and refrigerate for 2 hours.

Special Notes

Great summer time cold salad - with or without the meat. If you want to make this quick use Newman's Own - Low Fat Sesame Ginger Dressing as the dressing for the salad. I have also used bean sprouts in this salad. This salad goes well as a side dish for sushi. If you like the noodles a bit crunchy just put all together and serve right away.
