Pumpkin Apple Streusel Muffins

Ingredients

2 1/2 C flour

2 C sugar

1 T pumpkin pie spice

1 tsp baking soda

1/2 tsp salt

2 eggs beaten

1 C pumpkin

1/2 C veggie oil

2 C apples

Streusel:

2 T flour

1/4 C sugar

1/2 tsp cinnamon

2 tsp butter

Procedure

Combine 1st 5 ingredients. Combine eggs pumpkin and oil. Add liquid to dry ingredients. Stir in apples. Fill cups 3/4 full and sprinkle on the streusel topping. Bake 350 degrees for 35 minutes. Makes about 18 muffins.
