Apple Brie Omelet

Ingredients

Here's my recipe.

1 apple, peeled, cored, and cut in thin slices

3 1/2 tablespoons butter, divided

4 jumbo eggs, preferably fresh from the farm

2 teaspoons cream or milk

salt and pepper to taste

2 - 3 tablespoons regular brie or soft brie, at room temperature, diced

Procedure

Melt 2 tablespoons butter and saute the apple slices until soft.

Beat the eggs, cream or milk and salt and pepper until blended.

Melt remaining 1 1/2 tablespoons of butter in an omelet or saute pan over high heat. Pour in the egg mixture; stir lightly and allow the bottom to set.

Cover half of the omelet mixture with the sauteed apple slices and dot with the diced brie. Allow omelet to set and brie to melt.

Fold over the omelet and slide onto a warm plate.

Special Notes

Other people get ideas from cookbooks; mine often come in mysteries or elsewhere. Yesterday, as I was reading the new Louise Penny mystery that comes out later this summer, I salivated when reading of a brie and apple concoction. I realized that I had Sam's fresh Good Hart eggs, apples, and brie in the house so last night for dinner I made the following omelet. I found a recipe on the internet and made a few changes to it resulting in a delicious and very easy dinner with slices of thick-cut bacon, English muffin bread and some fresh farm market radishes. We were full and happy. The radishes were just the right accompaniment and made for a very easy meal. Larry loved it.
