Pumpkin Cake (with coconut)

Ingredients

Pumpkin Cake

2 C Sugar, 2 C pumpkin (15OZ CAN)

1 ¼ c oil, 4 eggs

2 c flour, tsp salt, 2 tsp cinnamon, 2 tsp baking soda, 2 tsp baking powder

In large bowl combine sugar and pumpkin, add oil, mix

Add eggs one at a time

Add dry ingredients and beat well , add ½ C coconut and mix ………….1/2 C chopped nuts optional

Pour into a greased and floured pan

9x13 pan ………350….45 minutes

Jelly roll pan….350…25 to 30 minutes…….until soft touch springs back and parts have separated from the edge of the pan .Let cool and frost

Frosting:

½ stick of margarine, 1, 8 oz 1/3 less fat cream cheese ( you stop worrying about the fat at this point anyway ) beat well

Slowly add 1 # confectioners sugar, 1 tsp vanilla, beat and add ½ cup coconut…..spread on cooled cake……..loves to be made the day before serving !!!!
