Arroz con Pollo

Ingredients

1 1/2 cup of washed rice

3 breast of chicken

1/2 cup of diced white onion

1/2 cup of diced tomatoes

1/2 cup of diced carrots

1 cup of peas

butter

2 cubes of broth

4 cups of water (for more flavor use broth in replace of water)

2 cloves of garlic diced

1/4 of a red pepper diced

a dash of turmeric

Procedure

Boil the chicken breasts in water adding the cubes of broth and the garlic. Let boil about 20 minutes or until cooked through. Reserve any of the broth you plan on using in replace of water. Shred the chicken.

In a pot melt the butter on low heat add the onions first. Then add the tomatoes and peppers. Next add the carrots and peas. Add the rice and mix everything together. Add the chicken and mix again. Finally add the broth and water stirring occasionally. Add turmeric for color if desired.

To serve form it into a dish or mold and empty onto the plate. A dash of lime juice or catsup are normal on top.

Special Notes

This is a recipe Mara brought back from Colombia. The more traditional way of cooking this would include boiling a whole chicken and using the broth from that instead of manufactured broth.
