Lentil and Rice Salad

Ingredients

Pistata:

carrots

onion

celery

sage

bacon or pancceta

oil

1T tomato paste

1/2 C white wine

salt

hot water

lentils (washed)

rice

parmesan cheese

scallions chopped

Procedure

In a food processor grind the pistata ingredients coarsely. Saute pistata in olive oil and butter if desired. Add 1 T tomato paste and the white wine and a little salt. Add hot water and washed lentils. Let cook for 10-15 minutes then add rice and cook until done. Add cheese and scallions before serving.

Alter the amount of water, lentils and rice to meet the number you are serving and the package directions. It should turn out the consistency of risotto.
