Ultimate Crab Cakes

Ingredients

1 onion minced finely

4 cloves garlic minced finely

Saute the above until lightly carmelized

10 pieces of good quality fresh white bread, crusts cut off and ground in food processor to resemble snowflakes.

1 pint jumbo lump crab meat

1 egg white only

2 T Mayo

lime juice

cilantro, thyme, tarragon – your choice but needs to be fresh

salt

fresh pepper

Side:

2 cloves mashed garlic

3 parts (scoops) mayo to 2 parts sour cream

½ of a lemon juiced

extra virgin olive oil

salt

coarsely ground black pepper

chives

celery root peeled and julliened

celery seed

Procedure

Combine above to make 6 hockey puck sized patties. Place in refrig to dry them out a bit after formed –about 30 minutes. Saute in oilive oil in a hot pan about 4-5 minutes on each side turning only once.

Serve the crab cakes over the side dish with lemon wedges and sprinkled parsley.
