Potato Bacon Cakes

Ingredients

1 lb potato

4 slices bacon fried and chopped

3 green onions chopped

cheddar or Comte or Gouda cheese shredded

1 egg

salt and fresh pepper to taste

Procedure

Steam the potatoes until tender when pierced with a knife.

Fry bacon until crispy, strain off fat and set aside.

Smash steamed potatoes and add the bacon, onions, cheese and egg and season with salt and pepper. Let cool.

Form potato mixture into four patties. Put reserved bacon fat into a large skillet over medium high heat. Add a touch more cooking oil if necessary. Fry potato cakes until golden and heated through. Let cool slightly on paper towels. Serve warm with a little sour cream maybe with herbs on top. Or more crumbled bacon.

A'Assiette de Paris modiefied by me. You can also use less fat by cooking in a little olive oil in a nonstick pan.
