Aloo Gobi

Ingredients

2 tsp veg. oil

1 tsp cumin seeds

2 small onions pureed

1/4-1/2 tsp turmeric

chili powder to taste

1/4 C cilantro

1 green chili

2 tomatoes pureed

water 50 ml

3 cloves garlic minced

1/2 inch of ginger minced

100 ml+ water

equal parts cauliflower and potato diced/chunks

salt to taste

2 tsp garam masala

Procedure

Add cumin seeds to hot oil and stir for a minute or two. Add onion puree and stir until onion is golden brown. Add turmeric, chili powder, cilantro, green chili, and pureed tomatoes. Add 50ml water and let cook for a few minutes. Add three cloves minced garlic, minced ginger, and 100 ml water or more. Add cauliflower and potato chunks, salt to taste, and garam masala. Cover and let cook over med heat for about 20 minutes until water is absorbed and the vegetables are tender. Serve immediately.

Special Notes

I made this and substituted curry for the garam masala. I also added coriander seeds ground. I used two large potatoes and a half head of cauliflower. Yummy! Serves 4.
