Fried Cashews

Ingredients:

  • 1/2 cup Canola Oil
  • 1/2 cup Raw cashews
  • 1/2 tsp Kosher salt
  • 2 Tbs Green onion, sliced thin
  • 1 Tbs Thai chilis, fresh sliced, can substitute Serrano chilis

Directions:

  • Fill a small sauce pan with the oil to a depth of about 1/2 inch and put over medium heat. Heat to 325 degrees.
  • Line a bowl with paper towel and set next to the stove. Have the salt and chilis/scallions ready before you start frying.
  • Add the cashews to the hot oil and fry for about 1-2 minutes. Keep in mind the cashews will get 12 shades darker after they are removed from the oil. (They will carry-over cook)
  • Once the cashews are done frying, lift them out with a slotted spoon and transfer to the paper towel lined bowl. Season immediately with salt and toss to coat evenly.
  • Transfer the cashews to a serving dish and garnish with the scallions and chili slices with still warm.
