Bacon Jam

Ingredients:

  • 1 lb Bacon

  • 1 large onion, finely chopped

  • 1 T olive oil

  • 1/2 cup brown sugar

  • 1/4 cup maple syrup

  • 1/3 cup apple cider vinegar

  • 1 t chili powder

Directions:

  1. Cook bacon in oven at 400 degrees until desired doneness, approx 15 minutes.

  2. Thinly slice onion and add to pan with olive oil and some of the bacon grease. Stir often until the onions are caramelized, about 15 minutes.

  3. Stir in garlic, brown sugar, maple syrup, vinegar, chili powder and cooked bacon. Bring mixture to a simmer then reduce heat to low. Cook until the liquid has reduced and thickened and the onios are jammy, 7 to 10 minutes.

  4. Let cool before transferring to a jar. Serve with cheese and crackers. (It's also delicious on a burger of grilled cheese.)
