Crab Soup

Ingredients

1/2 C flour whole wheat brown in pan stirring constantly

2 T butter

2 C chopped carrot

1 C celery

1 C onion

1/2 a green pepper

1-2 cloves garlic

1/2 T old bay season

1/4 tsp salt

1/4 tsp pepper

1/4 tsp thyme

1 bay leaf

4 C clam juice

1 1/2 C milk

1/2 C half and half

1 lb crab meat

1/3 C dry sherry

Procedure

Saute butter through garlic then ass cooked flour. Cook for 1 minute. Add seasonings. Add clam juice milk and half and half. Stir and cook over medium heat till thickened but do not boil or it will separate. Add crab meat and sherry cook 5 more minutes and serve.
