Goat Cheese Baked in Spaghetti Sauce

Ingredients

2 T olive oil

2-3 cloves of garlic minced

1 jar prepared spaghetti sauce

fresh plain goat cheese or ricotta cheese

garlic bread made with baguette slices with an olive oil and garlic and Italian spices mixture broiled in the oven on both sides till slightly golden brown.

Procedure

Grease a cast iron pan with olive oil then rub the garlic around in the oil in the pan. Leave the garlic in the pan. Pour in good quality Marinara sauce. Place large chunks of cheese scattered around in the sauce. Bake until warmed through and finish under the broiler to slightly brown the cheese on top.

Serve with garlic toasts or fresh baguette.
