Victoria's Pita Bread

Ingredients

1 C warm water

2 1/4 tsp yeast

1 tsp salt

2 1/2 C flour

Procedure

1. Dissolve yeast in water for 5 minutes until yeast is foamy.

2. In a separate bowl combine flour and salt.

3. Slowly stir in flour until mixtures come together. Knead until dough is smooth and elastic.

4. Oil a bowl. Place dough in bowl and let rise, undisturbed, until double about 1-2 hours.

5. Preheat over to 450. Divide dough into 8 balls. With a rolling pin roll into a flat disc.

6. Place disc onto a sheet tray and bake 5-10 minutes until pita is puffed and just beginning to brown.
