Orzo pasta cooked drained and cooled
black olives pitted and cut in half
red onion sliced then a chopped
marinated artichoke hearts
cherry tomatoes cut in half
red and yellow peppers chopped
cucumber chopped
scallions chopped
feta cheese crumbled
olive oil
lemon juice
salt
pepper
Greek seasonings
oregano
red wine vinegar
garlic minced fine on a microplane
After pasta has cooled toss all ingredients together to taste. You can add cooked chicken too. Roasted red and yellow pepper taste good in this too.
