Pineapple Fried Rice

Ingredients

Cooked Jasmine rice 2 cups

Ham, cooked, diced ½ cup

Medium size pineapple with stem and leaves in place

Pineapple, diced ¼ cup

Peas (fresh or frozen) ¼ cup

Raisins (golden are best) ¼ cup

Onion, cut into slices ½ medium

Shallot, minced 1 each

Thai red chili, thinly sliced 1 each

Pepper ¼ teaspoon

Thai chili sauce (and sambul olek) ½ Tablespoon

Salt ½ teaspoon

Butter or a neutral oil 2 Tablespoons

Procedure

  1. Wash the pineapple, cut lengthwise to one side of the stem and leaves, and remove the flesh and core. Cut the flesh removed into cubes and set aside.
  2. Melt the butter (or oil) in a sauté pan or wok, put in the ham, onions, shallots and stir fry. Add the peas, pineapple, and raisins, continue stir frying.
  3. Then add the rice and continue stir frying.
  4. Season with the salt, pepper, and Thai chili sauce and finish
  5. Slightly warm the pineapple in the oven and serve the fried rice in the pineapple. Garnish with cut veggies or orchids.
