Pineapple Fried Rice

Cooked Jasmine rice 2 cups
Ham, cooked, diced ½ cup
Medium size pineapple with stem and leaves in place
Pineapple, diced ¼ cup
Peas (fresh or frozen) ¼ cup
Raisins (golden are best) ¼ cup
Onion, cut into slices ½ medium
Shallot, minced 1 each
Thai red chili, thinly sliced 1 each
Pepper ¼ teaspoon
Thai chili sauce (and sambul olek) ½ Tablespoon
Salt ½ teaspoon
Butter or a neutral oil 2 Tablespoons

- Wash the pineapple, cut lengthwise to one side of the stem and leaves, and remove the flesh and core. Cut the flesh removed into cubes and set aside.
- Melt the butter (or oil) in a sauté pan or wok, put in the ham, onions, shallots and stir fry. Add the peas, pineapple, and raisins, continue stir frying.
- Then add the rice and continue stir frying.
- Season with the salt, pepper, and Thai chili sauce and finish
- Slightly warm the pineapple in the oven and serve the fried rice in the pineapple. Garnish with cut veggies or orchids.
