4-6 eggs beaten
gruyere cheese shredded - maybe a half cup??
salt and pepper to taste
Use a good cast iron pan that can go on the stove top and in the oven.
Microwave potatoes and cut them into slices. Saute cut up veggies and then set them aside. Brown the potatoes in the pan with a little butter and then add veggies back in. Beat the eggs and then add the shredded cheese. Pour this egg and cheese mixture over the potatoes and veggies in the pan. Place into the oven and bake about 20 minutes until set and lightly golden brown on top.
