Bundukies

Ingredients

Refrigerator Roll Dough - single batch

20 ounce package bacon (or more)

1 very large sweet onion or two medium sized sweet onions.

Procedure

Prepare refrigerator dough recipe the day before you want the bundukies. Cut up bacon when partially frozen into small pieces and cook until nicely crisp. Save a little of the bacon fat to cook the onions. Cook onions on medium heat until translusent and slightly browned. Mix the bacon and onion together and let cool.

Take a portion of the dough and form a rectangle approximately 2&1/2 by 3&1/2 inches. Place about a tablespoon of the bacon onion mixture down the middle of the dough and then fold the dough over and pinch to seal. Place the roll seam side down on a greased cookie sheet. Let the rolls rise for about 45 minutes before baking. Bake at 400 degrees for about 12 minutes until lightly golden brown. Brush rolls with melted salted butter when they come out of the oven.

Special Notes

We used to buy Bundukies from Ed's Breads on Leonard Street in Grand Rapids. There was usually a small line of people waiting at 8 am for the bakery to open to get their warm bundukies. It cost 4 dollars for 6 bundukies. They were a family favorite. I do not know what recipe Ed's Breads used but my version comes close.
