Colombian Chicken

Ingredients

Orange Peppers

Garlic

Chicken broth

Onion

Chicken

Amounts used depend on how many you are cooking for.

Procedure

Slice the peppers, onion and garlic. Reserve some of the peppers and onions for later. Cook them in vegetable oil until they have blackened in some parts. Put the cooked vegetables in a food processor and blend and then add the chicken broth and blend until smooth. Let the sauce cool.

In a oven safe pan put down a layer of peppers and onions with a little water. Lay chicken pieces on top. Pour the sauce over the chicken. Put the chicken in the oven at 375 ish. Cook until it is done.

Special Notes

Mara created this dish after returning from Colombia. Great with arepas, beans and rice, and avocados.
