Duck Breast

Ingredients

duck breast

salt and pepper

oil

Procedure

Preheat oven to 400 degrees. Score skin side of duck about 1/8 inch deep. Season the duck breast with salt and pepper. Put some oil in the pan. When hot place the duck breast in skin side down. Cook 8 minutes till skin is crispy. Turn breast and place in a hot oven for 8 minutes. Remove from oven and let rest for 3 minutes. Slice breast into thin slices about 8 slices.

Special Notes

I cooked for the 8 and then 8 and the breast was too done for Bill. I would reduce the cooking time by 2 minutes next time so 8 minutes on the stove top and 6 minutes in the oven. The time will also depend on the thickness of the duck breast. I also marinated the breasts for a few hours in olive oil with thyme and rosemary.
