Jasper's Caesar Salad

Ingredients

3 cloves garlic

4-6 anchovy fillets

1/2 lemon

4 tsp red wine vinegar

1 tsp worcestershire sauce

3/4 C olive oil

2 heads romaine lettuce

2 T grated parmesan cheese

2 cups croutons

salt

pepper

Procedure

In a shallow, unvarnished wooden bowl, add a little salt to the bottom. Add the peeled garlic cloves and mash with a fork until smooth. Add anchovies. Squeeze a half a lemon over anchovies, then proceed to mash up anchovies in a similar manner until a smooth paste forms. You may need to first cut the anchovies into smaller pieces using a steak knife. Add vinegar, oil, and worcestershire. Add pepper (house rule is 10 grinds per person) and mix well with fork.

Prepare lettuce in a separate large bowl. While still mixing with fork, pour dressing evenly over lettuce. Toss. Add grated cheese and croutons. Toss some more. Serve on chilled plates and with chilled forks and offer additional ground pepper.
