Poblano Pesto

Ingredients

2 Poblano peppers blackened on the gas stove top, remove blackened skin and seeds

Parmesan cheese

cilantro

2 cloves garlic

salt and pepper to taste

olive oil

Procedure

Food process to make a pesto sauce that is not completely smooth. Can be used to top steak, fish, chicken.

Tip for cilantro...when abundant chop roughly combine with some oil and freeze in ice cube trays.
