Best Guacamole Ever

Ingredients

2 cloves garlic

2 green onion - white part only

1 small roasted serano chili pepper

juice of 1/2 a lime

small handful of cilantro

red hot sauce to taste

2 avocados

salt to taste

Procedure

Blacken the skin of a serano chili on a grill or over a gas burner. Rinse the pepper under cool water to remove some of the skin. Cut open and remove seeds. In a food processor with the blade running mince the garlic, onion, cilantro and chili pepper. Add the lime juice and Redhot sauce. Add two avocados and salt to taste. Proccess by pulsing until fairly but not completely smooth.

Special Notes

David made this and it had a great smokey flavor! It was the best guacamole I have ever had. We served a dollop of it over a salad with thinly sliced skirt steak and carmalized onions and roasted/peeled and seeded pablano peppers with a bit of garlic and lime juice. We also had tomatoes, red onion and pepitos(roasted pumpkin seeds) on the salad. The guacamole kinda made a dressing especially with a little lime juice sprinkled over the salad. Sooooo yummy!
