Rhubarb Crisp

Ingredients

4 C rhubarb chopped

1/2 tsp salt

1 C sugar

topping:

3/4 C flour

1/2 C brown sugar

1 tsp cinnamon

1/3 C butter

3/4 C oats

Procedure

Butter a pan and then add the rhubarb. Sprinkle the salt and sugar on the rhubarb. Cut the butter into the other topping ingredients and then put on top of the rhubarb.

Serve warm with ice cream.

Special Notes

It is best to use nice young rhubarb. One of our family favorites in the spring! Vary the amount of rhubarb and the topping amount to fit the size of the pan you want to use.
