Key is cooking on a pizza screen (they are not expensive $9), with the oven at 500 degrees and in the over 9-10 minutes...

The secret family dough recipe is as follows
4 cups of pizza flour or bread flour with extra gluten added
1.5 cups of h20
yeast, about a table spoon
salt, about 1/2 table spoon
sugar, about 1 and 1/2 table spoon
oil, olive of course, about 1/4 cup
Proof Yeast with warm H2O and add sugar and oil to the proof. Pour into the flour and salt mixture. I like the food processor until it comes together..or dough hook in the mixer...I have put Roma's Italian seasoning into the crust...adds nice flavor....
The salt and sugar can be adjusted for your taste within reason.
The key with the dough is using flour with high gluten content and to make the dough the day before and letting it rest over night in the refrigerator after you have divided into portions( 3 in this case). Coat them with oil, cover with plastic wrap and let them rest over night.
