Bean Soup with Kale

Ingredients

1 tablespoon olive oil or canola oil

8 garlic cloves, crushed or minced(I use my microplane)

1 medium yellow onion, chopped

1 cup celery chopped

4 cups chopped raw kale

4-6 cups low-fat, low-sodium chicken or vegetable broth

1 (15 ounce) can white beans, such as cannellini or navy, un-drained

4 plum tomatoes, chopped(I like the fire roasted canned tomatoes)

2 teaspoons dried Italian herb seasoning(Roma Bakery seasonings)

Salt and pepper to taste

Procedure

In a large pot, heat olive oil. Add celery, and onion; saute until soft add in minced garlic . Add kale and saute, stirring, until wilted. Add broth, beans, and all of the tomato, herbs, salt and pepper. Simmer.

Special Notes

I like to add a little potato and I also have added wild rice or maybe a little pasta. You can serve with shavings of fresh parmesan cheese and fresh basil julienned.
