Opa Greek Cheese

Ingredients

Kasseri cheese 1/2 inch slice

salf and freshly ground pepper

2 T brandy

2 T butter

squeeze of lemon juice

good bread

Procedure

Bake under broiler until cheese is lightly golden brown and melty. Remove form heat and add brandy. Immediately flame and then squeeze on lemon juice. Serve with fresh bread.

Special Notes

Other recipes have you coat the cheese in flour and then dip in egg before frying in a pan on the stove top. After the cheese is brown on both sides remove from heat and torch with brandy then squeeze on lemon.
