Lemon drizzle cake

165 gm self raising flour ( farine à gateaux )
1 ½ tsp baking powder
165 gm soft margarine or butter ( at room temperature )
165 gm caster sugar
3 large eggs
grated zest of a lemon

I use a Tefal loaf tin (24 cm /10/ 8) greased and floured.
- Pre heat oven to 170°C/325°F
- Combine all the above together in a large bowl and beat with an electric whisk until smooth, do not over beat.
- Pour into the prepared tin and bake for about 30 mins.
- When cooked, remove from the oven, allow it to cool for a minute or two, while it is still warm take it out of the tin and put it on a serving plate.
- Drizzle over the juice of a lemon and then sprinkle over 1 Tbs caster sugar, making sure that the top of the cake is evenly covered, this must be done while the cake is still warm !
