Lemon drizzle cake

Ingredients

165 gm self raising flour ( farine à gateaux )

1 ½ tsp baking powder

165 gm soft margarine or butter ( at room temperature )

165 gm caster sugar

3 large eggs

grated zest of a lemon

Procedure

I use a Tefal loaf tin (24 cm /10/ 8) greased and floured.

  1. Pre heat oven to 170°C/325°F
  2. Combine all the above together in a large bowl and beat with an electric whisk until smooth, do not over beat.
  3. Pour into the prepared tin and bake for about 30 mins.
  4. When cooked, remove from the oven, allow it to cool for a minute or two, while it is still warm take it out of the tin and put it on a serving plate.
  5. Drizzle over the juice of a lemon and then sprinkle over 1 Tbs caster sugar, making sure that the top of the cake is evenly covered, this must be done while the cake is still warm !

Special Notes

This is a really quick and easy cake that always goes down well.
