1 Lbs Shiitake mushrooms, whole, large steams removed
2 Tbl Sesame Oil
2 Tbl Spicy chili crisp
2 oz Scallion bottoms, charred, sliced
1 Tbl Soy sauce
1 tsp Black vinegar (chinkaing), or Worcestershire
Procedure
Preheat the oven to 400 degrees, toss the shiitakes in the sesame oil and season with salt and pepper. Roast at 400 for 8 minutes, then remove, flip them over, and roast for a further 5 minutes.
Once cool enough to handle julienne them into strips.
While shiitakes are roasting, toss scallion bottoms in oil, salt and pepper. Grill until quite blackened. Once cool enough to handle, slice them thin.
Combine spicy chili crisp, soy sauce, and black vinegar in a bowl and stir together. Add roasted shiitakes, grilled scallions and toss to combine.
Use immediately, or store in refrigerator. Serve warm or at room temperature.
