Shiitake Roasted with crunchy garlic oil

Ingredients

  • 1 Lbs Shiitake mushrooms, whole, large steams removed
  • 2 Tbl Sesame Oil
  • 2 Tbl Spicy chili crisp
  • 2 oz Scallion bottoms, charred, sliced
  • 1 Tbl Soy sauce
  • 1 tsp Black vinegar (chinkaing), or Worcestershire

Procedure

  • Preheat the oven to 400 degrees, toss the shiitakes in the sesame oil and season with salt and pepper. Roast at 400 for 8 minutes, then remove, flip them over, and roast for a further 5 minutes.
  • Once cool enough to handle julienne them into strips.
  • While shiitakes are roasting, toss scallion bottoms in oil, salt and pepper. Grill until quite blackened. Once cool enough to handle, slice them thin.
  • Combine spicy chili crisp, soy sauce, and black vinegar in a bowl and stir together. Add roasted shiitakes, grilled scallions and toss to combine.
  • Use immediately, or store in refrigerator. Serve warm or at room temperature.
