Stuffed French Toast

Ingredients

Stuffed Chicken Breasts

4 chicken breasts

2 diced apples

seasoned bread crumbs (enough to coat apple chunks)

1/4 cup shredded cheddar cheese

pepper and garlic powder to taste

light wine or apple juice

In a bowl, mix diced apples, bread crumbs, and shredded cheddar cheese. Slice the chicken breasts to make a "pocket." Fill each breast with a portion of the apple stuffing. Place in a hot skillet with a little oil. Season to taste with pepper and garlic powder. Brown the meat, then simmer. Add wine or apple juice and let it cook down into a sauce. Total cooking time about 35 minutes.

Stuffed French Toast

#1: 4 Eggs

1 Cup Whipping Cream

1/2 tsp Vanilla

1/2 tsp Nutmeg

#2: 8 oz pkg Cream Cheese

1 tsp Vanilla

1/2 cup Chopped Walnuts

1 loaf French Bread

#3: 8 oz jar of Apricot Jelly

1/2 cup Orange Juice

Procedure

#1-Beat ingredients in bowl. #2-Beat Cream Cheese & Vanilla until fluffy – stir in nuts. Cut French Bread into 1 1/2 “ slices with a pocket in top of each (slice 3/4 way thru-to fill with Cream Cheese mixture). Dip stuffed bread into Egg-Whipping Cream mixture (#1). Cook on grill on both sides until golden brown. For syrup – heat Apricot Jelly and Orange Juice. Drizzle Apricot syrup over French Toast. (Makes 10-12 slices)
