MEDITERRANEAN ORZO SALAD
1 LB Orzo (Delano) cooked according to package
2 cups roasted red peppers, cut and drained well on paper towel
1 generous cup pitted kalamata olives cut in half
1-2 cups snow peas blanched 1-2 min cut in half or thirds
1 t salt
1 t pepper
1 jar capers, drained
1 pack feta cheese (1-1/2 cup)
Fresh dill
Dressing
Mix all ingredients together and toss with the dressing.
This salad can be made a day or two ahead of time.
