Farro and Mushrooms

Ingredients:

1 1/2 Cup Whole Farro

Salt and pepper

3 T olive oil

12 oz. cremi mushrooms - trim and chop

1 shallot minced

1 1/2 tsp minced fresh thyme (1/2 tsp dry)

3 T dry sherry

3 T minced parsley

1 1/2 tsp sherry vinegar

Directions:

Boil farro with salt / pepper - cook 15-30 min and drain


Saute/brown mushrooms, shallot and thyme in oil for approximately 10 minutes


Add sherry, parsley and vinegar
