Irish Raisin Bread

Ingredients

1 1/2 sticks margarine or butter

1 C sugar

2 eggs

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

4 C flour

1 C buttermilk (can use milk with 1-2tsp vinegar added)

1 tsp vanilla

1 C raisins

Procedure

Cream sugar, butter, and eggs. Add salt, baking powder, and soda to mixture. Add flour one cup at a time. After 2 cups of flour add buttermilk slowly with the last two cups of flour. Mixture will be thick, moist and sticky. Add vanilla. Fold in 1 cup of raisins last. Place mixture evenly in a sprayed nonstick bundt pan. Bake at 350 degrees for 40-45 minutes. Rub butter over bread when it comes out of the oven.
