Swiss Steak

Ingredients

Buy amount of round steak needed or some supermarkets sell swiss (pounded) steak. Pound the steak if needed.

Cut meat into 4-inch by 4-inch pieces. Shake in a plastic bag into which you have placed some flour salt and pepper. In an oiled frying pan brown each piece on both sides then smother with onions and cans of tomatoes and a little water. Simmer until meat is very tender - around 2 hours. Be careful that it does not burn on the bottom. Add a can of peas. Thicken some with mixture of flour and water and add salt and pepper to taste.

Procedure

Serve over mashed potatoes.

Special Notes

This is one of Grandpa Lincolnhol's favorite meals. I think he often requested it for his birthday dinner with mashed potatoes. Applesauce cake was a likely dessert with this too. We like this served with steamed brussel sprouts. I made this meal for Grandma and Grandpa Lincolnhol Jan 2013 before they went on their trip to Hawaii.

I cook this in a large heavy Le Creuset casserole dish. I brown the meat on the stove top first. After I remove the browned meat I add a half cup of water with a tsp of beef bullion added and deglaze the pan. Then I place thick slices of onion on the bottom, a layer of the meat, another layer of onions and then pour the stewed tomatoes over all. I bake it in the oven at 325-350 for 2-3 hours adding the peas and a little milk with flour in the last 15 minutes or so to thicken.
