Cowboy Caviar

Ingredients

1 can black beans

1/2 C chopped black olives

1/2 C chopped onion

3 cloves minced garlic

2 T oil

3 T lime juice

1/2 tsp salt

1/4 tsp cayanne pepper

2 tsp cumin

1/4 tsp black pepper

Procedure

Mix together and refrigerate overnight. To serve, spread cream cheese in a pie plate and spoon bean mixture over the cream cheese. Garnish with 1/2 cup fresh red pepper, diced green onion, and diced boiled eggs. (Yuck on the egg but try it if you wish.)
