Sweet Potato & Beet Hash

Ingredients

1 large sweet potato peeled and chopped into bite sized pieces

1 large beet peeled and chopped into bite sized pieces

olive oil to drizzle

1-2 slices bacon cut into small pieces

1/2 of a sweet onion chopped

salt and pepper to taste

Procedure

Toss the sweet potato and beet pieces with olive oil and then roast in the oven for about 30 minutes at 400 degrees. Saute bacon and add onion to wilt. When the beets and potatoes are tender toss them in the fry pan with the bacon and onion mixture. Salt and pepper to taste and serve.
