Mushroom Artichoke Soup

Ingredients

1 lb button mushrooms sliced

1/2 lb shitake mushrroms sliced

1/2 lb portabella msuhrooms sliced

1 C thinly sliced shallots

2 large carots sliced

1/4 C butter

3 T flour

1/2 tsp thyme crushed

1/2 tsp garlic powder

1/4 tsp crushed red pepper

1 14 oz artichoke hearts drained and quartered

1/4 C oil packed dried tomato

3 14 oz. cans of chicken broth

1 bay leaf

1 C half and half or cream

Procedure

Cook mushrooms, onions, carrots in butter. Stir in flour and spices. Add chicken broth and cook until thickened. Stir in artichokes, tomatoes, and bay leaf. Simmer 15 minutes. Stir in half and half or cream and low simmer. discard bay leaf and serve.
