Rhubarb Muffins

Ingredients

1 1/2 C brown sugar

1/2 C oil

1 egg

1 tsp vanilla

1 C buttermilk

1 1/2 C diced rhubarb

1/2 C chopped walnuts

2 1/2 C flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

topping:

1/3 C sugar

1 1/2 tsp cinnamon

1 tsp melted butter

Procedure

Cream top ingredients then add in the dry ingredients after they have been combined. Sprinkle the topping on before baking. Bake at 400 degrees for 20-25 minutes.
